A bit of Valentine sweetness

Can I share with you how much my family loves spritz cookies? I don’t even know where the idea originated, but my mom has been making them for as long as I can remember, and these little things go like hotcakes! They make a great little Valentine’s Day treat:

Recipe

1 cup butter (softened)
1/2 cup sugar
2 1/4 cup all purpose flour
1 egg
1 tsp. almond or vanilla extract
food coloring, if desired
colored sugar, if desired

Ingredients for spritz cookies

Step 1: Preheat oven to 370*. Then cream butter and sugar together. I like to sit the butter out and let it get to room temperature first. If you must soften in the microwave, do so at 10 second intervals. Do not melt! (It changes the texture of the dough.) Try creaming it with a stiff spatula.

Step 2: Add egg, food coloring (if desired), and extract. If you want a really good pink color, add plenty of red coloring. When the flour goes in, it will dilute the color.

Blend in liquids, and plenty of red food coloring!

Step 3: Blend in flour, do this little by little.

Step 4: Fill your cookie press and firmly press onto ungreased cookies sheets (if it’s your first time working a press, it might take a little extra effort, but after you get the hang of it, it works really well).

I just have to say that friends are the best! I snagged this cookie press from a friend’s car when it was on the way to the thrift store =).

Step 5: Slip cookie sheets into the oven, set a timer for 6-8 minutes and wait! When the cookies are ready, they will be firm, but not yet browned.
